It comes from the western region of the country on the border with Guatemala. There are about 20,000 growers in the country, of which 95% are small farmers who farm just under 20 hectares. The SHG (Strictly high growing) classification means that the coffee was grown at a higher altitude, at a lower temperature, which means slower ripening and a denser grain.
